"We do use gelatin in a couple of the beers, but only in ones that are filtered and the gelatin particles are filtered out as part of the process. The gelatin helps to clump the particles and settle them to the bottom of the tank before filtration and it is subsequently removed. We don't use isinglass, and any of our unfiltered beers don't use gelatin in them either.
"You would probably have to ask when it comes to the seasonals, although usually our IPAs are unfiltered (currently a white IPA called Altocumulous), and the 928 is always unfiltered. The chateau, stout, and petit are all filtered, as is our current sour (Coconino Common). Our current one-off seasonal, the Hop Project 7 isn't filtered. If you ask the bartenders, they can definitely point you in the right direction on them."
