"I'd say that 95% of our wines are produced without using any animal derived products. I cant imagine why other wineries would have a reason to use animal products on a day to day basis. Our current Ice wine was a difficult wine to clarify before filtration. To help with clarification I was forced to use a fining agent that contained milk protein. Most fining can be achieved using gelatin or bentonite but in the case of our ice wine, we needed to use all three approaches... I never fine regularly and rarely have the need to fine. If I do fine, it's mostly with bentonite and rarely gelatin. Gelatin tends to have too much of an impact. We prefer subtle changes in wine. Of our current wines, the only wine to be concerned about is the Ice wine."
