"All of our beers are traditionally produced using
only hops, malt, and occasionally a supplemental sugar source such as raw sugar, molasses or maple sugar, and I have not used honey in the six years I have brewed here (though it was used in the past). None of our beer is filtered, though I do use gelatin to clarify two of our German style beers, our Ave Rat Malt Liquor and the Kolsch 45. I am a vegetarian, and have yet to find an acceptable alternative that is both vegan friendly and will give me the clarity I need for those styles of beer. Each of those beers is only brewed once a year, so it represents a very small percentage of our annual production, and I respect the right of folks to know what goes into the beer they are drinking."
