"Most people expect a bright, clear pint. However, the use of finings agents, such as carrageenan and isinglass, is not permitted by the German Beer Purity Law and we therefore do not fine as part of our brewing process. In order to produce our bright beers, we remove the haze by filtration. Filtration as a process is permitted by the German Purity Law and, in fact, is common practice within most breweries around the world. The process removes solids (e.g. yeast, protein and polyphenols) but doesn’t add anything to the beer. For the styles of beer we filter, the process not only creates a visibly bright beer but also creates a crisper, cleaner palate. We do, however, produce unfiltered beers; Hefeweizen, an unfiltered wheat beer, and Wild WEST, an unfiltered lager. For these styles, the haze is part of the character and flavour profile of the beer."
