"O'so brand beers are brewed using Plover Municipal Water, Malted Barley from Briess Malting in Chilton, Hops from around the world and yeast.
Occasionally a few other ingredients are used. The Big O uses a bit of dried Orange Peel. NightTrain has an addition of Oats. One of our seasonal beers, Sweet Lady Stout, however uses a bit of LACTOSE which is an unfermentable milk sugar. Most Sweet Stouts are brewed this way.
Our kettle fining agent is a brand called Koppaclear, which is a refined Carageenan from seaweed.
If you like the NightTrain, we do age some of it in Bourbon Barrels, sometimes NightTrain is also infused with cold steeped local roasted coffee, and one version of NightTrain is carbonated with Nitrogen Gas for that "Guiness" type of pour which changes the mouthfeel and flavor of the beer."
