"Animal "parts" are used because of the naturally occurring proteins in these parts. They are highly refined products. We do not use any fining agents in any of our red wines. They are typically aged in barrel for 12-22 months and do not need to be fined. I do use Milk and isinglass as a fining agent for white wines. The milk can remove bitter tannins and the isinglass (derived from the air bladder of the sturgeon fish) can brighten the wine and reveal more fruit characteristics. All of this immediately binds to the specific chemical compound and is filtered out of the final wine."
